"SIM-ee-un," as in simians, higher primates. I much prefer Simon.

SIM-ee-un, same as comment #1. Prefer Simon as well, though Simeon was in the Bible and has a cool connection to the Savior. But there’s Simon Peter, one of Jesus’ disciples too, so you’re good both ways, if Biblical connection is something you’re looking for. It’s fine to use either name, even if you aren’t religious though.
