My guy loves classic, mainstream names, and while some I just can't stand to use, I'm starting to realize that there are some I would use (in honor of family members, mostly). So...
BOYS:
Robert - my guy's middle name
Graham - my best friend from kindergarten
Noah
Eric - my guy's best friend
Heath
William - Shakespeare, middle name of one of my close friends
Jonathan - my guy's first name
GIRLS:
Bridgette - my guy's sister
Rebecca - his mother
Jacqueline - my best friend
Selena - one of his best friends
Ophelia
Rose - shortened from Rosemary, his grandmother
So...what sounds good together? Should I do a mainstream-first-name-unusual-middle-name thing?
(An example of that would be Robert Pacey...a name I LOVE.) Last name is Olsen.

I personally do like the combination of a mainstream name with a unique middle name. But the names you have can be put into a lot of nice combinations. My favorites are:
I think I'm more of the opposite mind-set. I prefer unique/uncommon first names with classic middle names. I guess I don't really see the point of having a unique/uncommon name if you aren't going to use it (or call them that) and there are names I love that are more mainstream like James & Christopher but I don't want people to call them Chris or Jim/Jimmy so I like them more for the middle name spot.
As to your names - I really like Graham, William & Jonathan for boys and Rose, Selena, Jacqueline & Ophelia for girls.

From your list, I like Eric, Heath (love as a nn for Heathcliff - I'm a big Bronte fan), and William (love with nn Liam) for boys and Jacqueline, Ophelia, and Rose for girls.
