I remember Iolaus (Ee-oh-lis) from the old Hercules show staring Kevin Sorbo, so that is how I would pron. it.
I like how Iolaus Demetri sounds but not with the last name Troy. The tree/Troy sounds are hard to say right after each other.
Of your other options, I think Iolaus Apollo Troy sounds best. GL!

If you're going with the Ee-oh-lis pronunciation I prefer it with Demetri, I think it flows the best.
If you're going with Eye-oh-lis either Apollo or Orion sound the best : )
