I think that's a cool thing to honor from! Well, Shunammite is actually a word, meaning "person from Shunem." From Hebrew, Shunammite can also be transliterated Sunammite, so you could use Suna, Sunna, or Sunny. Also, it's synonymous with Shulamite / Sulamite (and is translated as such in most versions and translations of the Bible in English), and I think Sula is actually really pretty. Shula isn't my style but it could totally work. Shalem/Salem/Shalom is pretty and is directly related to the word. It translates as peace, adding another dimension of meaning. Additionally, you could use something from her life and character as her name, such as Love (would be cute as a middle). If you're willing to go for more of a stretch, you could get Amy.
My favorite of your options is Sula. I think it's really pretty and simple, but still unique. It definitely stands out, and it would cause people to ask the story of her name and you'd have a lot of meaning to share.
