Apollonia is way too much for a fn or even mn. Polliana/Pollianna looks and sounds much better if you want to call her Polly. I like Katherine Danae best by far. It goes great with her sister. GL!

Katherine Danae is veryy cute.
Apollonia Kate would be cute too, but you’d have to make sure that her future teachers will know for sure that she goes by Penny so they wont have to worry about pronouncing her name right.

Apollonia reminds me of the "Godfather". I would use it as a mn. I voted Katherine Danae. It my favorite of your names and I love the nns Kat/Kate.
