Elinor Violet is my favorite combo, and I love the nn Nora as well! Evie (from the initials EV) would also be cute.

Eleanor Madeline is too prim/proper. Eleanor is a nice, yet old fashioned name. Using Keegan or Tegan would update it, for that edge. I personally prefer Keegan.

Also, I would keep the spelling as Eleanor. Change up names lead to many a misspelt birthday cards
