I like Persey better. Sephy does not sound flattering to me.

Just call her whatever pops out of your mouth when you are talking to her. Practice cooing to a baby: "how’s my little Persephone... blah, blah, blah, ... and eventually the right nickname will come to you. Seriously!!!
