Well, all on its own, I would pronounce it like "soft" without the -t. But if I knew it was a nickname for Sofia, I’d pronounce it to rhyme with "loaf".

If it’s a full name, I’d assume Sof, as in "soft" but if I was unsure if it was a nickname or not, I would go with Sof as in "sofa"
