Which spelling is best? I like Saarah because it is not popular, but I am wondering if it will be too confusing. Sarah is pretty, but way too popular. I don’t really like Sara, but I am open to suggestions.

Changing the spelling doesn’t make Saarah less "popular" than Sarah since they are pronounced the same. If you like the name Sarah - go for it, if you are bothered by it’s popularity choose something else - don’t think you are being original by altering the spelling.

Just so you know, Saarah is the Arabic way to spell it. I know it looks weird, but I didn’t make it up, and I really like the double A concept.
