I really think that Joey is the best way to go. Joee and Joeigh look rather silly, in my opinion. Joie is okay, but I'd want to say it ZHOY-ee, like Joia. If you want something more feminine, I'd suggest Jolie as a nickname for Joelle, or possibly Jojo, but if you're set on Joey, then that or Joie would be the best.

Joie looks more like a weird spelling of Joy to me.

If you want it pronounced "Joey," then I'd stick with Joey. Joie will be pronounced "Joy" and Joeigh will be pronounced "Joe-Ehg."

Different spellings leave a child up for their name to often be misspelled throughout their life. I would stick to the usual spelling.
