What a gorgeous list. You are going to have a hard time whittling it down. Not a klunker in the bunch.
My only quibble is the spelling of Sybil. Since the word is "sibyl" that's the spelling I use.
Do you have a middle name in mind? If not, what about combining them: Eleanor Daphne, Caroline Matilda, Esther Phoebe, Louisa Charlotte? The possibilities are endless.

I love so many of the names on your list!
Caroline-Gorgeous name and very classy.
Charlotte-I really love this name. Its recent popularity hasn't made me love it any less. Quite pretty.
Daphne-This name is underused. It's really lovely. Many don't realize it's a nature name, meaning 'laurel'. I imagine someone with this name as quietly elegant, not at all snobby, and with a playful streak.
Diana-Always a classic. I like it quite a lot and love Diane even more.
Eleanor-Very nice! I don't like it shortened.
Elena-I want to love this name, but I find that most people mispronounce it, so instead, I am annoyed by it.
Emilia- See note for Elena.
Esther-This seems very old-fashioned, but my acquaintance with a young, vibrant, smart, and funny Esther has made me rethink it. Still, I only give it an "OK".
Freya-Strongly dislike this name.
Grace-I love this name! It has been used a lot in recent years, especially as a middle name. Some even consider it a "filler" middle name. As a first name, though, I don't hear it much. I've never met a Grace that I disliked.
Louisa-It's ok.
Lucia/Luciana-It's ok.
Matilda-Not a fan.
Natalia-I like it, especially as a middle name. If it were Natalie, I love it and would use it as a first name.
Phoebe-I like it quite a lot. To me, it has a spunky vibe.
Sophia/Sofia/Sophie-It's ok.
Sybil-This name gives off 2 associations for me. The first association is with the movie by this name about a young woman with dissociative identity disorder. The movie made quite an impression on me, so much so that I would never even consider this for a name. The second association I have is with the word 'sibilant'. While there is nothing inherently negative about a sibilant sound, it also isn't necessarily the thing I would want to spring into my mind every time I say my daughter's name.
Veronica-It's ok.
Valeria/Valerie-Valerie is one of the most beautiful names I can think of. If we'd had a 2nd daughter this would have been her name. My best friend in Kindergarten was named Valeria. She told me her parents accidently put an -a at the end and so it was her legal name. Throughout school with new teachers we'd hear 'Valeria' pronounced as though it rhymed with 'malaria'. My friend's family mostly called her Valerie, but when they called her Valeria it rhymed with 'galleria'. Caution to you if prefer one over the other...either way, it will get mispronounced more often than not throughout her lifetime. Yes to Valerie, no to Valeria.

Caroline : bland and common
Charlotte: it's pretty but I don't like the nicknames
Daphne : not very attractive. Everyone will always think of scooby doo

Elena : not a hard name to pronounce. Most people know how to pronounce this .

Gosh tough choice: favourite to least
Freya:- Top name! Gorgeous!
Phoebe:- one of my favourite names! Gorgeous on a baby, enough attitude for a teenager and delightful for an adult!
Daphne:- underused and under appreciated. Gorgeous!
Emilia:- I love this spelling of Emilia.
Lucia/Luciana:- delightful. Either or!
Sophie: -soft,a timeless classic and elegant.
Sophia: - again a beautiful name, just wary of its popularity. If that doesn't bother you, disregard this comment!
Esther:- this name has that classic but retro vibe to it! Beautiful.
Grace:- another timeless classic you can't go wrong with
Matilda:- This name is growing on me the more I see it. I am seeing it more and more so might be something to consider!
Natalia: don't like nor dislike this name, nothing wrong with it though!
Louisa:- nothing wrong with this name, it's a good name, prefer it in a older child than a baby! (Seems silly but have to pick somehow right).
Elena / Eleanor:- to me, nothing stands out about this nameX but again, nothing wrong with it!
