I think Ivy looks and sounds the best with your surname.
Ivy is the most used of those, know a couple, so not 'lesser used' Coral is the most attractive but no doubt someone will complain about the L sound. No issue imo. Ember is okay, but less interesting.

I like Coral. Off the beaten path but not too quirky given its similarity to Cora and Laurel.
I prefer Amber to Ember myself...I think it's the phrase "dying embers" that puts me off.
I've had too many bad bouts of poison ivy to consider using Ivy, but it does sound nice with Williamson.
