I'm not really fond of any but I voted for Manny because it's vintage. Vinny is a little to "gangster" for my taste and Sully brings to mind the word sullen.

I prefer the full names of Emmanuel/Manuel, Vincent & Sullivan to Manny, Vinny & Sully.
I knew a Spanish-born Manuel whom we called Manny so I think Manny is the best choice. Vinny would be a distant second place.
I would never call a child Sully. The word sully means to "damage", "soil", "taint" or "defile". They are not words I would want associated with any child of mine.
