I won’t tell you which spelling to use, I’ll just say how I would pronou each one.
Briany: I would say Bri (long I) an-ee
Briony: Bri-o-nee
Breony: Bree-o-nee

I prefer Bree as a name.

Bryony is another spelling. The most common spellings of this not very common name are Briony and Bryony. I would use one of these 2.
