Ryette would be my preferred spelling (most logical in getting the pronunciation you want). I'm assuming you want emphasis on the 2nd syllable, ry-ETT, because if you emphasize with first syllable you get the word Riot.

I'm not going for a Juliette type of ending. Riot is correct...due to my country accent that's how I say it. Apologies if that bothers you.

I like Ryett best of your two options but would you consider Ryatt since it's more familiar because it's similar to Wyatt?

I couldn't find any info on your spellings, so this is what I came up with.

Ryette means "king". Ryette is an alternate spelling of Ryan (Irish, Gaelic): cross-gender use of the surname. STARTS WITH Ry- ASSOCIATED WITH king (queen)

Rhett or Wyatt. I do understand the appeal of Ryett, it looks and sounds so cool BUT in the end it's just another spelling of Riot which is not a useable name. Like naming your kid Blayde or Arsyn
