Elise vs. Elyse vs. Ellise

I think we’ll be naming our daughter Sophia Elise with a two-syllable last name. Which spelling of Ellise do you prefer... or another variant like Elysse? I’m a little concerned about it being confused or mispronounced as Elsie the Borden cow, but want to keep it simple, too. Also, it has to start w/ E, not A, or her initials will be SAC. Eww. Thanks for your input!

The name is a very pretty one, but I do like the first spelling the best. Exotic is a little much for a middle name, at least in my opinion.
